Keto Banana Pudding Meringue Cheesecake

All jokes aside, you’re going to find this Keto Banana Pudding Cheesecake with Meringue very a-peel-ing! 
Did we mention it’s sugar free, low carb and keto friendly? As an added bonus, prep time is only 30 minutes!

Ingredients

For The Crust

  • 1 ½ cup blanched almond flour
  • ¼ cup confectioners Swerve (sweetener)
  • 1 tsp vanilla extract
  • ¼ cup melted butter
  • 1 egg
  • Pinch of salt

Cheesecake Layer

  • 1 box Simply Delish Banana Pudding
  • cup heavy whipping cream
  • 16oz oz cream cheese
  • 1 cup confectioners Swerve
  • ½ cup almond milk
  • 1 tsp vanilla extract

For The Meringue

  • 5 large egg whites
  • ¼ tsp cream tartar
  • 1 cup confectioners Swerve
  • ½ tsp lemon zest

Instructions

  • Turn oven to 300° F.  Coat an oven safe dish (8x8 Pyrex). 
  • In a bowl, mix all the crust ingredients until well incorporated and place in dish.
    1 1/2 cup blanched almond flour, 1/4 cup confectioners Swerve, 1 tsp vanilla extract, 1/4 cup melted butter, 1 egg, Pinch of salt
  • With a knife, poke some holes and bake for 12 to13 minutes, until lightly golden. Once finished, remove and let cool. 
  • Add Simply Delish Instant Banana Pudding Mix, milk, heavy cream, and vanilla and mix until creamy and soft.
    1 box Simply Delish Banana Pudding, 2/3 cup heavy whipping cream, 16oz oz cream cheese, 1 cup confectioners Swerve, 1/2 cup almond milk, 1 tsp vanilla extract
  • Add on top of your baked crust. Freeze for two hours. 
  • In a final medium bowl, add meringue ingredients. Use a hand mixer to mix the ingredients until soft peaks form. It should be silky.
    5 large egg whites, 1/4 tsp cream tartar, 1 cup confectioners Swerve, 1/2 tsp lemon zest
  • Blow torch to a nice golden brown. Chill for 30 minutes.
  • Top with your favorite crushed cookies, serve and enjoy!
