Paleo Chocolate Raspberry Bites

Ingredients
Raspberry Cheesecake
- 1 cup soaked raw cashews
- ⅔ cup dairy free cream cheese from @kitehillfoods
- ½ packet Simply Delish Raspberry Jel
- 2 tbsp powdered monk fruit
- ⅓ cup raspberries
- ¼ cup nut milk
Chocolate Granola Crust
- 2 cups of your favorite granola or @wildwayoflife Chocolate Grain Free Granola
- ⅓ cup melted paleo chocolate
- 1 tbsp melted coconut oil
- ¼ tsp Himalayan salt
Instructions
- Make the crust by first blending the granola in a food processor until it reaches a crumble consistency.2 cups of your favorite granola
- Add to a bowl and mix in the melted chocolate and coconut oil.1/3 cup melted paleo chocolate , 1 tbsp melted coconut oil
- Press into an 8x8 baking pan lined with parchment paper and stick in the fridge.
- Blend together your soaked cashews and nut milk in a food processor. Blend until smooth then add the rest of your ingredients and continue blending.1 cup soaked raw cashews, 1/2 packet Simply Delish Raspberry Jel, 2 tbsp powdered monk fruit, 1/3 cup raspberries, 1/4 cup nut milk, 1/4 tsp Himalayan salt, 2/3 cup dairy free cream cheese from @kitehillfoods
- Once everything is well incorporated, pour over the crust layer and then stick back in the fridge to set.
- Once set, cut into 16 pieces and enjoy! For added yumminess, top with fresh fig slices and freeze dried raspberries.
