Vegan Flan

Ingredients
Caramel
- 1 tbsp coconut oil
- ½ cup allulose
- 4 tbsp sugar-free maple syrup or molasses
- ½ cup coconut cream
- ½ tsp vanilla extract
- pinch of salt
Custard
- 2 cups unsweetened canned coconut cream
- 4 tbsp sugar-free maple syrup
- 1 tbsp arrowroot powder
- 1 sachet Simply Delish Unflavored Jel
Instructions
Caramel
- Add all ingredients to a pot, bring to a boil, then simmer to reduce.
- Once thickened to right consistency, remove from heat and submerge saucepan in ice bath to stop cooking.
- Transfer to a container and let cool.
Custard
- Add all ingredients to a saucepan except for unflavored jel, and stir with a whisk.
- Bring to a boil, stirring frequently, then reduce to a simmer for 2 minutes.
- Whisk in the Simply Delish Unflavored Jel and remove from heat.
Assembling the Flan
- To prep for custard, spray 2 ramekins with non stick spray.
- Spoon caramel sauce into the ramekins to cover the entire bottom.
- As soon as custard is removed from heat, pour into the ramekins on top of the caramel. Pouring over the back of a large spoon helps for even pouring.
- Let custard sit in the fridge to set completely for at least 2 hours.
- Loosen edges of the custard with a knife when ready to serve and flip onto a plate.
- Pour more caramel sauce on top and enjoy!
