Vegan Chocolate-Peppermint Pudding Bars Recipe
The taste of chocolate and peppermint reminds us all of the holidays, especially a cup of delicious hot coco! This recipe is just like a cup of hot cocoa but in the form of pudding bars. This recipe is perfect for anyone who follows a vegan diet, but at the end of the holidays, this recipe is great for everyone!
Vegan Chocolate Peppermint Pudding Bars
Ingredients
Crust
- ¾ cup oat flour
- 2 tbls maple syrup
- 1 pinch salt
- 1 flax egg 1 tbsp ground flax & 3 tbsp water, let thicken for 10-15 min
Filling
- 1 packet Simply Delish Chocolate Pudding
- 1¼ cup oat milk
- crushed candy canes or mints
Instructions
- Preheat oven 350°F.
- Mix crust ingredients to form a dough. If too sticky, add more flour and if too dry add some warm water or more syrup.
- Press into a parchment lined small loaf/baking pan.
- Bake for 12-15 minutes.
- Make pudding according to directions.
- Once crust has cooled for about 20 min, spread pudding on top & top with crushed candy canes.
- Place in the freezer until set (at least 4 hours).
- Let thaw slightly, slice, & enjoy.

Are you the kind of person who celebrates the start of Christmas Day with a big and delicious breakfast? These donuts have the best of both worlds, a little sweet and a little salty. If you follow a vegan diet, feel free to substitute the bacon for a vegan-friendly bacon substitute.
Airfryer Maple Bacon Donuts
Ingredients
Filling
- 1 packet Simply Delish Vanilla Pudding
- 1¼ cups milk alternative or, 2 cups milk
- 2 tbls sugar-free maple syrup
- 1 tsp cinnamon
- 10 drops Oooflavors bacon flavor concentrate If you don’t have the concentrate, you can add actual bacon bits for that smoky flavor!
Topping
- ½ cup maple syrup equal parts
- ½ cup powdered sugar substitute
- bacon crumbles
Dough
- 1 packet Keto and Co. pancake mix
Instructions
Filling
- Mix the Simply Delish Instant Vanilla Pudding with the milk according to the package.
- Once the pudding is, add the maple syrup, cinnamon and Oooflavor bacon concentrate.
Topping
- Mix equal parts maple syrup, and powdered sugar substitute until a frosting forms.
- Cook three pieces of bacon and crumble.
Dough
- Follow the instructions for the Keto and Co. pancake mix.
- Add the mixture to a silicone sphere mold and fill halfway.
- Once filled, airfry for 10-12 minutes at 350°f.
Assemble
- Once cooled, fill each donut with the pudding filling mixture by poking a small hole and using a piping bag.
- Dip each donut top in the maple glaze and add the bacon crumbles to each one.
- For added decoration, sprinkle powdered sugar substitute over the batch of donuts.
- Serve and enjoy.

- 1 packet Simply Delish Chocolate Pudding
- 1¼ cup almond milk
Crust
- 1 egg
- ⅓ cup Lakanto powdered sugar monkfruit sweetener
- 1½ cup almond flour
- 3 tbsp cocoa powder
- ¼ cup butter solid
- ½ tsp baking powder
- 1 tsp vanilla extract
Topping
- ½ cup heavy cream
- 2 tbsp Lakanto monkfruit sweetener
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F.
- Start with your pudding first! Whip your Simply Delish Instant Pudding powder and almond milk until it doubles in size and takes on pudding consistency.
- Then place your pudding in the fridge while you start to make the brownie crust.
- Put all of your ingredients in a medium bowl and whisk. Make sure the butter is well incorporated.
- The dough should be crumbly.
- Using your hands spread out the dough in your dish.
- Bake for 15 min or until set.
- Once that is done let it cool for a bit and then start making your whip cream topping.
- In another bowl whip your cream and sugar. Then add in your vanilla until your mixture forms stiff peaks!

Let’s switch it up this year for Santa. Instead of the traditional chocolate chip cookies that Santa normally enjoys, considering baking these cookies. Your little ones will love mixing and baking these alongside you, knowing that Santa will not only love these cookies but will love dunking them into a tall glass of milk. Strawberry Pudding Marshmallow Cookies
Ingredients
- ¾ cup unsalted butter softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 cups all-purpose flour
- 1 packet Simply Delish Strawberry Pudding
- 1 tsp baking soda
- ½ tsp salt
- 15-20 golden Oreos
- 1 cup fruit-flavored marshmallows
Instructions
- Preheat the oven to 350°F.
- Using a hand mixer or a stand mixer fitted with the paddle attachment, cream the butter and sugar until smooth.
- Add in eggs and vanilla extract, beat until combined. Scrape down the bowl once complete.
- In a separate bowl, whisk together dry ingredients (flour, pudding mix, salt, baking soda).
- Add dry ingredients to wet ingredients in 2-3 portions, mixing well after each addition.
- Coarsely crush the Golden Oreos using a food processor. Add the Oreos and marshmallows to the dough and mix until combined.
- Use a spoon or cookie dough scoop to measure and ball the cookie dough (if you are not using a cookie dough scoop, you should roll the dough into balls with your hands).
- Place balled cookie dough on to greased cookie sheet, leaving at least 1 inch in between each cookie.
- Bake for 8-10 minutes or until the bottom just begins to brown (cookie edges should just barely brown before removing from the oven).
