Ingredients
Tart Crust
- 1 package Keto Candy Girl Shortbread Mix
- 1 stick butter
Tart Filling
- 2 cups heavy whipping cream
- 2 tbsp unsalted butter
- ¼ cup powdered sweetener
- 16 oz cream cheese softened
- 2-4 tbsp powdered sweetener (do this to your taste)
- 1 lemon finely zested
- 5 tbsp fresh lemon juice
- 1 sachet Simply Delish Unflavored Jel
Tart Topping
- ½ cup sugar-free orange marmalade
- 2-3 cups fresh berries blackberries, blueberries & raspberries were used for this recipe
- fresh mint leaves (optional)
Instructions
Tart Crust
- Mix together according to package directions. Press into 9 or 10” tart pan. Prick lightly with fork, & freeze for 1 hour.
- Bake at 350°F for 11-13 minutes. Cool completely.
- In a heavy bottom saucepan, whisk together heavy whipping cream, powdered sweetener & unsalted butter.
- Bring to a boil, reduce heat to a simmer & cook 15-20 min till reduced to 1 and ¾ cups, & has thickened. Whisking periodically.
- Set aside to cool completely. Place lemon juice in a small microwave-safe bowl. Sprinkle package of jel on top & stir.
- Allow to sit for 5 minutes. Place in microwave & cook on high power for 15 seconds. Set aside.
Tart Filling
- Beat together cream cheese, sweetener, & lemon zest. Beat for 2 minutes until very fluffy.
- Slowly add cooled heavy cream mixture, stopping several times to scrape the sides of the bowl. Continue beating for 1 minute.
- Slowly add jel mixture while continuing to beat. Beat for 2 minutes. Pour into cooled crust & spread evenly. Refrigerate 3 hours .
- Place marmalade in a small microwave-safe bowl. Heat on high power for 1 minute.
- Pour through a fine sieve, to remove solids. Discard solids.
- Combine strained marmalade, & berries in a bowl & stir to combine. Spoon mixture over lemon layer.
- Refrigerate for 2 hours. Garnish with fresh mint leaves.
