Banana Bread Pudding Squares with Banana Frosting

Ingredients
Blondies
- 1 cup oat flour
- 2 tbsp cornstarch
- ½ tsp baking powder
- ½ tsp cinnamon
- pinch salt
- 1 tbsp ground flax plus, 2 tbsp water
- 1 large banana mashed
- ⅓ cup almond butter
- 2 tbsp oat milk
- 2 tbsp maple syrup
- splash vanilla
Banana Pudding Frosting
- ½ packet Simply Delish Banana Pudding
- ½ cup oat milk plus, 2 tbsp
- Optional Topping: Crushed cookies of choice, crushed nuts, chocolate chips, or cinnamon
Instructions
Blondies
- Preheat oven to 350°F.
- Prepare flax egg and set aside. Mix dry ingredients.
- Add wet ingredients to flax egg.
- Then combine dry and wet (do not over mix).
- Transfer to prepared 9x5 loaf pan and bake for approximately 25-30 minutes.
Banana Pudding Frosting
- While blondies bake, whisk pudding mix with milk for 2 minutes.
- Once blondies have cooled, spread on frosting plus optional toppings and enjoy!
