This fun, spooky recipe is so perfect for Halloween! These cookie sandwiches have a delicious, rich chocolate filling and feature Simply Delish Instant Chocolate Pudding!

Ingredients
- 1 packet Maui Keto Treats Chocolate Chip Butter Cream Cookie Mix pre
- 3 squirts Stevia
- 2 cups heavy whipping cream
- ½ cup Color Me Keto allulose
- 8 drops Sweet Life Flavor Co. Chocolate Flavor
- ½ packet Simply Delish Chocolate Pudding
Cookie Decorations
- ¼ cup low-carb sprinkles
- almond slivers
- candy eyeballs
Instructions
Cookies
- Make Maui Keto Treats Chocolate Chip Cutter Cream Mix according to package instructions, then add 3 squirts Stevia (balances out the cooling of eryrithol).
- Cut your cookies into consistent mini sizes using a Trader Joe's spice cap or any circular lid.
Creamy Cookie Filling
- Whip 2 cups of heavy whipping cream until stiff peaks form. ****Please Note: It is important to make the whipped cream before. Adding in the pudding early will not let it get to the proper consistency.
- Add in ½ cup of Color Me Keto Allulose, 8 drops of Sweet Life Flavor Co. Chocolate Flavor, and ½ of a sachet of Simply Delish Instant Chocolate Pudding Mix.
- Whip until all ingredients are well combined.
- Assemble your Monster Cookies by sandwiching the filling between two cookies.
- Roll the filling in low carb sprinkles, add fangs out of chunks of almonds and top off your cookies with candy eyeballs.
