Ingredients
Churro Cupcakes
- 1 cup almond flour
- 2 tsp baking powder
- ¼ cup sweetener
- 1 tsp cinnamon
- ¼ cup butter melted
- ¼ cup almond milk
- 2 eggs
- ½ tsp vanilla
Horchata Frosting
- 1 packet Simply Delish Vanilla Pudding
- ½ cup keto horchata
- 1 cup heavy whipping cream
- 10 drop Oooflavors horchata extract
Instructions
Churro Cupcakes
- Preheat Oven to 350° F.
- Mix dry ingredients.
- Mix wet ingredients.
- Combine wet and dry ingredients until fully incorporated.
- Add mixture to cupcake tray lined with cupcake liners and bake for 15 to 20 minutes.
Horchata Frosting
- Mix all ingredients with a hand mixer until well combined.
- Add mixture to a pipping bag and pipe your cupcakes using your favorite technique.
