Ingredients
For The Cakes
- 1 batch @ketocandygirl Lemon Cookies It takes approximately 2 cookies for 1 pie crust (using a 4” tin).
- 1 box Simply Delish Vanilla Pudding
- 1 cup of heavy cream
- ¼ cup lemon juice
- 1 tbsp lemon zest
For The Garnish
- ¼ cup whipped cream
- 1 slice of lemon
- 2-5 blackberries
- ¼ cup crust crumbles
Instructions
For The Cakes
- Make one batch of @ketocandygirl Lemon Cookies as directed on the package.1 batch @ketocandygirl Lemon Cookies
- While those are baking, make a batch of Simply Delish Natural Instant Vanilla Pudding with heavy cream for a thick pie filling.1 box Simply Delish Vanilla Pudding, 1 cup of heavy cream
- Add lemon juice and lemon zest to the pudding and refrigerate.1/4 cup lemon juice, 1 tbsp lemon zest
- Once cookies are done baking, let cool enough to handle. Crumble and use those cookie crumbles to form a crust in mini pie tins.
- Pop the formed crust in the freezer for about 5 minutes. Once set, fill with the pudding.
For The Garnish
- Garnish pies with whipped cream, a lemon slice, some crust crumbles and blackberries. Enjoy!1/4 cup whipped cream, 1 slice of lemon, 1/4 cup crust crumbles, 2-5 blackberries
