Ingredients
Cookies
- 1 package Zen Sweet Life Snickerdoodle cookie mix
- 4 tbsp butter melted
- 1 egg
- 1 tsp red velvet baking emulsion
Filling
- 1 sachet Simply Delish Vanilla Pudding
- 1½ cups heavy whipping cream
- ⅓ cup One on One Flavors mini marshmallow
- 4 drops One on One Flavors vanilla cupcakes
Coating
- ½ cup sugar-free chocolate chips
- 2 tsp coconut oil
Instructions
- Preheat oven to 350° F. Line baking sheet with parchment paper.
- Add cookie mix to bowl along with melted butter, egg and baking emulsion. Mix well using a hand or stand mixer.
- Scoop onto baking sheet with a small cookie scoop.
- Bake 9 minutes and cool completely.
- Add heavy cream to a bowl along with flavoring. Sprinkle pudding mix in and whip until thick and creamy.
- Add marshmallows and mix to combine.
- Sandwich filling in between two cookies. I used my medium cookie scoop to do this and it portioned out perfectly.
- For the topping add chocolate chips and coconut oil to bowl and microwave in 15 second intervals until you can stir it smooth.
- Pour over cookies and top with sprinkles.
