Sugar-Free Strawberry Lime Coconut Cream Chocolate Bars

Ingredients
Lime Coconut Layer
- 4 cup unsweetened desiccated coconut
- 1 sachet Simply Delish Lime Jel
- juice and zest of one lime
- 1¼ cups unsweetened coconut cream
- 3 tbsp monkfruit powdered sugar
Strawberry Cream Layer
- 1 sachet Simply Delish Strawberry Pudding
- 2 cups Two Good yogurt vanilla greek yogurt
- ⅓ cup sugar-free white chocolate melted
- 1 tbsp coconut oil
Chocolate Coating
- 3 cups sugar-free dark chocolate
- ¼ cup coconut oil
Instructions
Lime Coconut Layer
- In a stand mixer, start by whipping 1 Cup of the coconut cream until light and fluffy. Add in the Keylime pie flavor drops, powdered sugar, lime zest and juice. Whisk again until combined.
- Heat up the remaining ¼ cup of coconut cream and dissolve the packet of Simply Delish Lime Jel into it.
- Pour this into the other ingredients while the mixer is whisking on low. Bring the mixer up to speed and whip for 1 minute.
- Use a rubber spatula to fold in the desiccated coconut.
- Line a square brownie dish with plastic wrap and press the lime coconut mixture evenly into the bottom. Place in the freezer to set.
Strawberry Cream Layer
- Start by whipping together the strawberry pudding, using the vanilla Greek yogurt in place of the liquid on the box recipe. Add in the strawberry short cake flavor now if desired.
- In a microwave safe bowl, melt the white chocolate and coconut oil together.
- Pour the chocolate into the mixer while it is whisking. Whisk for another 1 - 2 minute until light and fluffy.
- Pour this strawberry cream mixture on top of the lime coconut layer and place in the freezer to set for 6-8 hrs until completely firm.
- Remove from dish and cut into long rectangular bars when ready for dipping.
Chocolate Coating
- Melt the chocolate and coconut oil together and stir until combined.
- Dip the frozen strawberry lime bars in the chocolate and let harden in the fridge.
- Top with fresh limes, lime zest, and fresh strawberries.
- Store these in the fridge, allow the interior fillings to thaw and come to a softened temperature before enjoying!
