Keto Lemon Pudding Loaf

Ingredients
- 2 Cups almond flour
- ⅓ Cups sugar alternative monkfruit etc
- 1 Tbsp baking powder
- ½ Tsp salt
- 1 Sachet Simply Delish Lemon Pudding
- 1 Sachet Simply Delish Vanilla Frosting
- 2 Cups whole milk plus more for icing
- ¼ Cup lemon juice
- 3 eggs
- Lemon zest
Instructions
- Grease a 9×5 loaf pan or line it with parchment paper and Preheat oven to 325 F.
- Make Simply Delish Lemon Pudding according to package instructions using milk and reserve 2/3 for batter1 Sachet Simply Delish Lemon Pudding, 2 Cups whole milk plus more for icing
- Stir all ingredients aside from frosting mix together until smooth and pour into the pan.2 Cups almond flour, 1/3 Cups sugar alternative, 1 Tbsp baking powder, 1/2 Tsp salt, 1/4 Cup lemon juice, 3 eggs
- Bake for 50 minutes. After removing from the oven, let cool completely in pan before turning out
- Make the lemon icing glaze by mixing milk, lemon zest, and frosting mix together until desired consistency is reached2 Cups whole milk plus more for icing, Lemon zest, 1 Sachet Simply Delish Vanilla Frosting
- Pipe on top of the cooled loaf and slice to serve
