Ingredients

  • 2 Cups almond flour
  • Cups sugar alternative monkfruit etc
  • 1 Tbsp baking powder
  • ½ Tsp salt
  • 1 Sachet Simply Delish Lemon Pudding
  • 1 Sachet Simply Delish Vanilla Frosting
  • 2 Cups whole milk plus more for icing
  • ¼ Cup lemon juice
  • 3 eggs
  • Lemon zest

Instructions

  • Grease a 9×5 loaf pan or line it with parchment paper and Preheat oven to 325 F.
  • Make Simply Delish Lemon Pudding according to package instructions using milk and reserve 2/3 for batter
    1 Sachet Simply Delish Lemon Pudding, 2 Cups whole milk plus more for icing
  • Stir all ingredients aside from frosting mix together until smooth and pour into the pan.
    2 Cups almond flour, 1/3 Cups sugar alternative, 1 Tbsp baking powder, 1/2 Tsp salt, 1/4 Cup lemon juice, 3 eggs
  • Bake for 50 minutes. After removing from the oven, let cool completely in pan before turning out
  • Make the lemon icing glaze by mixing milk, lemon zest, and frosting mix together until desired consistency is reached
    2 Cups whole milk plus more for icing, Lemon zest, 1 Sachet Simply Delish Vanilla Frosting
  • Pipe on top of the cooled loaf and slice to serve
