Ingredients

Base

  • cup coconut flour
  • cup egg whites
  • tsp cinnamon
  • 3 tbsp monk fruit sweetener

Pie Filling

Toppings

  • 5 low carb chocolate cookies
  • 1 tbsp white chocolate chips
  • 2 cherries

Instructions

  • Preheat the oven at 350F.
  • Mix all the dry ingredients for the base in a bowl.
    1/3 cup coconut flour, 1/3 tsp cinnamon
  • Add the wet ingredients and stir well.
    1/3 cup egg whites, 3 tbsp monk fruit sweetener
  • Pour into a small baking dish and bake for 10 minutes.
  • Mix the ingredients for the pie filling, top the once baked and cooled base.
    1 tbsp Simply Delish Black Cherry Jel, 1 cup Greek yogurt, 2 tbsp monk fruit sweetener
  • Add your toppings, enjoy!
    5 low carb chocolate cookies, 1 tbsp white chocolate chips, 2 cherries
